I want to use a slider or grid of recent post on my Home page, can I do it with Uikit? or what module should I use?

Many users use Article Grid or Article Slider for this.

When setting up UiKit 3 Article Grid: I create a new module, uikit grid, and then it seems that I have to add each post under 'Elements', is that right?
I don't want to manually assign posts there, what I'm trying to achieve is to post to be added automatically as new posts come in. Do you know if I can do that?

All you have to do is assign the desired posts to a category (i.e. create a category beforehand) and then select the category in the plugin. Every post that you then create and assign to the category will automatically appear the way you want it.

I honestly can not find that Category option for the plugin/module configuration. I just updated Uikit but still can't see that

You need to download the right plugin.
It seems you are currently using simple grid and not article grid.
